Crispy Sheet Pan Salmon with Veggies is a healthy and delicious meal that can be prepared, cooked and, served in less than thirty minutes. Lately, I’ve been so busy but I don’t want to spend money on unhealthy and (let’s be real) unsatisfying fast food. With this one sheet pan meal, you get fast without the regret.

One Protein, Two Veggies

For Crispy Sheet Pan Salmon with Veggies, your entire meal is prepared on one sheet pan in the oven. I typically do one protein and two vegetables.

The first and most important rule? Pick proteins that cook fairly quickly so you don’t end up with burnt vegetables.

For proteins, I would suggest fish, shrimp, chicken, sausage, or tofu. Some vegetables I’d consider are asparagus, tomatoes, cauliflower, broccoli, onions, and potatoes.

For this recipe, I opted for salmon, asparagus, and cherry tomatoes. If you’ve been on my site a while, you’ll see I have an inclination for salmon. It’s rich in healthy fats and tastes amazing. Asparagus is easy to cook and pairs well with salmon. Finally, cherry tomatoes are currently in season and add a pop of color to this dish.

Need to clear out the fridge before your produce goes bad? Fill your sheet pan with an array of vegetables. All you need to do is drizzle it with some oil and sprinkle on some salt and pepper. Just spread the salmon and veggies evenly on the pan so that everything is cooked thoroughly.

Crispy Sheet Pan Salmon with Veggies are great for picky eaters because they can pick and choose what they want to add to their plate. Just scale down if you’re only cooking for two or one!

Preparing the Sauce for the Crispy Sheet Pan Salmon with Veggies

To keep your Crispy Sheet Pan Salmon with Veggies from being too basic, create a sauce mixture to add to your salmon. We want to keep things simple but still excite our taste buds.

This mayonnaise-based sauce includes a mixture of dill for added tanginess, salt, and pepper for taste and Dijon mustard for a hint of spice. The creamy consistency ensures that your salmon doesn’t dry out in the oven.

The sauce is also a great base for the panko crumbs you’ll sprinkle over the salmon. Finally, you have full-flavored salmon with a crunch!

Ingredients

  • 4 Skin-on salmon fillets

  • 1/4 cup Mayonnaise

  • 1/2 cup Dijon mustard

  • 1 1/2 tablespoon Fresh dill

  • 3/4 teaspoon Himalayan or kosher salt

  • 3/4 teaspoon Black pepper

  • 1/4 cup Panko (Japanese-style breadcrumbs)

  • 1/2 pound Fresh asparagus, trimmed and halved crosswise

  • 1/2 cup Cherry Tomatoes, rinsed and dried

  • Canola oil

  • 1/2 halve Lemon

Directions

  • Preheat the oven to 400°F. Line a rimmed baking sheet with parchment paper. 
  • Place asparagus & cherry tomatoes on the baking sheet and pour canal oil over. Using your hand, massage until all is coated. Sprinkle salt and pepper over top.
  • Place asparagus across baking sheet, you should have two rolls. Next, place cherry tomatoes at the top, middle and bottom of banking sheet. (see above photo.)
  • Next, stir together mayonnaise, dijon mustard, dill, salt (1/4) and pepper(1/4) pepper in a medium bowl. 
  • Place salmon filet, skin side down, on top of asparagus.  
  • Spread mixture over salmon fillets in an even layer; top with panko, and press lightly to adhere. Sprinkle lemon and zest over salmon.
  • Bake in oven for 12-15 minutes or longer depending cooked salmon preference.
  • Remove and sprinkle remaining dill over cooked salmon and serve.
