Firstly, let’s talk ingredients. For this recipe, I utilized Trader Joe’s Organic Tomato & Roasted Red Pepper Soup and the Sweet Potato Gnocchi with Butter & Sage. I threw in some fresh spinach for taste and added nutrients.
Trader Joe’s Sweet Potato Gnocchi are soft, pillowy mounds of goodness accentuated with butter and sage. I love heating up these pre-made bites when I’m tight on time. There’s no trial and error involved because they always come out perfect!
Sweet potatoes are my favorite superfood veggie so I love adding them to recipes. The added flavors of butter and sage balance out the sweet potatoes and make for a robust flavor. While the gnocchi is great on its own, I decided to kick it up a notch by adding them to a soup.

What is gnocchi?
Gnocchi is an Italian pasta that is actually more similar to dumplings. They most often consist of potato. Gnocchi is essentially cooked mashed potatoes, flour and eggs. They are light, fluffy and bite-sized. Some gnocchi recipes add ricotta to the dough. I’ve seen it prepared many ways. All are delicious!
How should I store leftovers?
When you’re nice and full, put your leftover soup in an air-tight container. Store it in the fridge and use before four days.
