Firstly, let’s talk ingredients. For this recipe, I utilized Trader Joe’s Organic Tomato & Roasted Red Pepper Soup and the Sweet Potato Gnocchi with Butter & Sage. I threw in some fresh spinach for taste and added nutrients.

Trader Joe’s Sweet Potato Gnocchi are soft, pillowy mounds of goodness accentuated with butter and sage. I love heating up these pre-made bites when I’m tight on time. There’s no trial and error involved because they always come out perfect!

Sweet potatoes are my favorite superfood veggie so I love adding them to recipes. The added flavors of butter and sage balance out the sweet potatoes and make for a robust flavor. While the gnocchi is great on its own, I decided to kick it up a notch by adding them to a soup.

That’s where Trader Joe’s Organic Tomato & Roasted Red Pepper Soup comes in hand! Low in sodium, but packed with flavor, this boxed soup is a great base for a hot dish. You won’t want to go back to basic tomato soup after you get a taste of this. It’s the perfect blend of vegetables with a great silky consistency. Now it’s time to make dinner!

You read that right! While cooking the sweet potato gnocchi on the stovetop, add fresh spinach. After that, heat up your soup and add your gnocchi and spinach. It’s really that simple! Cozy up with a bowl of this ultimate comfort food after a long day.

What is gnocchi?

Gnocchi is an Italian pasta that is actually more similar to dumplings. They most often consist of potato. Gnocchi is essentially cooked mashed potatoes, flour and eggs. They are light, fluffy and bite-sized. Some gnocchi recipes add ricotta to the dough. I’ve seen it prepared many ways. All are delicious!

How should I store leftovers?

When you’re nice and full, put your leftover soup in an air-tight container. Store it in the fridge and use before four days.

Ingredients

  • 1 pk Sweet Potato Gnocchi

  • 1 ct Tomato and Red Pepper Soup

  • 1 cup Spinach

  • 2 tbp Water

  • 1/4 tsp Salt & Pepper (more if needed)

Directions

  • Sweet Potatoes Gnocchi
  • In a non-stick skillet add gnocchi and 2 tbp of water. Cover and cook for 3-minutes.
  • Add spinach and cook for an additional minute.
  • Tomato Roasted Red Pepper Soup
  • In a medium pot, on med-high heat, bring soup to a boil.
  • Add soup to a bowl and place the Sweet Potato Gnocchi and spinach in the center of the bowl. Sprinkle with salt and pepper and enjoy!
