Roasted Parmesan Sweet Potatoes are not only delicious, but they’re also ridiculously easy to make. You bake them until they have a crisp coat and a soft center that will mash with just the touch of a fork. This side dish will end up taking center stage.

Preparation

Preheat the oven to 425 degrees F. That high temperature is what ensures your potatoes get nice and crisp. Gather all of your seasonings and garnish.

While you’re waiting for the oven temperature to adjust, rinse your sweet potatoes and cut them into 1/2 inch pieces. Maintain consistency while slicing to ensure that all of the sweet potatoes cook evenly and thoroughly.

In a large mixing bowl, add melted butter, minced garlic, salt, and the chopped sweet potatoes. Add the rest of your spices after coating the sweet potatoes with garlic and salt. Mix the potatoes with sunflower oil, paprika, dill, sage, cumin, thyme, and garlic powder.

Add the seasoned sweet potatoes to a large sheet pan that’s been sprayed lightly with oil. Spread them out to arrange them in one even layer. Ensure none of the sweet potatoes overlap or you’ll end up with steamed potatoes instead of roasted potatoes.

Cook for 35-40 minutes then remove from the oven. Allow the sweet potatoes to cool for about five minutes.

Then, add a generous amount of fresh Parmesan and parsley. I suggest adding cheese after roasting the sweet potatoes because if it is added in the oven, it may burn and give off a slightly bitter taste.

If you drench your sweet potatoes in olive oil, they will be oversaturated. That’s why my recipe calls for sunflower oil. Also, be sure you’re cooking at a high temperature and check on the sweet potatoes in the oven. If they’re soggy after ten minutes, drain some of the oil out of the pan.

How do I store my leftover Roasted Parmesan Sweet Potatoes?

Place leftovers in an air-tight container and store it in the fridge for up to three days. To reheat, place it back in the oven for 10 minutes to get them nice and crispy again.

  • Next, add sunflower oil, paprika, dill, sage, cumin, thyme, garlic powder and salt to the mixture.
  • Add seasoned sweet potatoes to a large sheet pan and spread out to arrange in an even layer.
  • Cook for 35-40 minutes then remove from the oven.
  • Allow to cool for 5-6 minutes and generously add fresh Parmesan and parsley. Serve and enjoy!
